This lovely little eggplant will make some mighty-fine ratatouille. :)

Do you have a good slow cooker recipe for the 'rat? I have lots of eggplants that I don't know what to do with . . .

We don't have a crockpot recipe, but we've found both oven and stovetop ratatouille recipes (we prefer the stovetop one, cooked in our ginormous iron skillet).

I'll bet that you could layer tomatoes, onions, squash and eggplant in the crockpot with a bit of broth and sprigs of fresh herbs and it'd turn out just fine!

deborah, I tried this oven recipe with good results (I kept it in longer than the recipe called for until the tomatoes semi-caramelized, providing the bulk of the flavor). There's no sauteing of the veggies--you just chop and bake. Maybe you could adapt it for the crockpot?

A Google search for "crockpot ratatouille" pulls up some recipes as well. If you try any, let us know how it goes.

My favorite way to cook ratatouille has to be on the stovetop, however.
